With a few camping trips happening this summer we will definitely be making this family favorite. I love serving mine on a bed of spinach for some extra veggies!
Camping Breakfast Skillet
Ingredients:
4 cups cubed mini potatoes (we used multicolor mini potatoes)
1 tbsp butter
1 cup sliced and cubed kielbasa or cooked ham.
4 eggs
1 cup aged cheddar cheese
Directions:
Turn on camp stove and heat cast iron skillet.
Add 2 cups of water and potatoes. Bring water to a boil.
Reduce heat and simmer for 10 minutes or until potatoes are tender with a fork.
Drain the water and set the potatoes aside. Add butter to the pan and once melted add potatoes and kielbasa. Cook for three minutes stirring occasionally.
Make four spaces in the potato mixture and crack eggs into each indentation. Cover and cook for 2 minutes.
Sprinkle cheese over the egg mixture and cook until eggs are set and cheese is melted.
Our Camping Breakfast Skillet was prepared on the Coleman Fyre Cadet Propane Stove
Add your own ideas to this skillet by frying onions, topping with blue cheese or using leftover hot dogs instead of kielbasa.
Whichever way you create yours it will be a delicious breakfast that will keep you full and satisfied regardless of how long your morning hike is.
Plus, food just tastes better when it’s cooked outside, doesn’t it?
