Camping Breakfast Skillet

A delicious breakfast skillet that can be made over a fire, on a camp stove or at home.

Ingredients

  • 4 cups cubed mini potatoes we used multicolour mini potatoes
  • 1 tbsp butter
  • 1 cup sliced and cubed kielbasa or cooked ham.
  • 4 eggs
  • 1 cup aged cheddar cheese

Instructions

  1. Turn on camp stove and heat cast iron skillet.
  2. Add 2 cups of water and potatoes. Bring water to a boil.
  3. Reduce heat and simmer for 10 minutes or until potatoes are tender with a fork.
  4. Drain the water and set the potatoes aside. Add butter to the pan and once melted add potatoes and kielbasa. Cook for three minutes stirring occasionally.
  5. Make four spaces in the potato mixture and crack eggs into each indentation. Cover and cook for 2 minutes.
  6. Sprinkle cheese over the egg mixture and cook until eggs are set and cheese is melted.
