Ice cream sandwiches are comfort food for me. The combination of ice cream and cookie or ice cream and waffle is true delicious perfection.

While we often think of ice cream sandwiches in summer we think these homemade ice cream sandwiches are perfect any season.

A delicious treat, snack or dessert and easy to make ahead and refrigerate until ready to serve.

You will love that these ice cream sandwiches are made with a homemade waffle and vanilla ice cream.

Homemade Ice Cream Sandwiches

Homemade Ice Cream Sandwiches

For our Ice Cream Sandwiches, you need some delicious waffles. You can use purchased waffles or make our homemade easy waffle recipe.

Easy Waffle Recipe

Waffle Recipe Ingredients:

1 cup all-purpose flour
1 tsp baking powder
2 tbsp white sugar
1/4 tsp salt
1/8 tsp cinnamon
1 cup of milk
4 tbsp butter, melted
2 large eggs

Waffle Recipe Directions:

Preheat waffle maker.
In a large mixing bowl combine flour, baking powder, sugar, salt, and cinnamon. Set aside.
In a small bowl mix together milk, butter, and eggs.
Add wet ingredients to dry ingredients and mix until combined.
Ladle onto hot waffle iron and cook according to classic waffle instructions.

Easy From-Scratch WAffles

A delicious treat to make with at home, better than store-bought. Perfectly delicious any time of year. The combination of waffles and ice cream is a foodie dream.

Ingredients

  • 1 cup all-purpose flour

Instructions

  1. Preheat waffle maker.

  5. Add butter and stir until mixed. (do not overmix)

  6. Ladle onto hot waffle iron and cook according to classic waffle instructions.

Once you have your waffles you are ready to make your sandwich.

Ice Cream Sandwich Ingredients:

4 waffles, cooled
Premium Ice Cream
Chocolate Sauce (we prefer the shell chocolate sauce)
Cherries
Sprinkles

Ice Cream Sandwich Directions:

Cut waffles (in pairs) into smaller sizes.
Scoop ice cream with a tablespoon (so you don’t get too much) onto bottom waffle.
Add a top waffle and place on a plate.
Once all are filled with ice cream top with chocolate sauce/cherries/sprinkles.
Serve immediately.

    This looks amazing! I can totally swap out the all-purpose flour for gluten-free flour and make this Celiac Safe! I’ve not had a good ice cream sandwich since my diagnosis nearly two years ago!!!

    I’m not a fan of store bought ice cream sandwiches, but substituting those dry, processed cookies for fresh, homemade waffles is a game changer. These sound incredible!
