Pumpkin muffins are everything I love about Fall baking.
Moist, delicious and rich flavor with a hint of spice.
We’ve got our long pants out and the sweaters are ready – it must be Fall.
While I love pumpkin any time of year, there is something about pumpkin in the Fall that just speaks perfection.
If you are making these for school lunches just omit the pecans and you have a nut-free muffin your kids will love as much as you do.

Pumpkin Muffins
Ingredients:
2.5 cups all-purpose flour
1 tsp salt
1 tsp baking soda
1.5 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp ground ginger
1 tbsp ground flax
2 cups canned pure pumpkin (not pumpkin pie filling)
4 large eggs
2 cups sugar
1/2 cup vegetable oil
1/2 cup butter, melted
Directions:
Preheat oven to 350.
In a large bowl combine all dry ingredients. In a stand mixer beat pumpkin, eggs, sugar, oil and butter together until fully combined.
Add dry ingredients in batches and mix until batter if complete.
Pour batter into muffin liners and bake for 20-25 minutes.
Check to ensure muffins are cooked all the way through by inserting a toothpick.
Once cooled top with Caramel Pecan Topping and serve.
Caramel Pecan Topping
Ingredients:
1 can sweetened condensed milk
1/4 cup firmly packed light brown sugar
1/4 cup salted butter
1 tsp vanilla
pinch of cinnamon
1/2 cup pecan pieces
Directions:
Place all ingredients (except pecans) in a saucepan and bring to a boil mixing continuously. Allow to boil for a few minutes and keep mixing until mixture has thickened.
You can add pecans to the mixture, or use the pecans as a garnish once topping is on the muffins.
