Lemon seems to make everything tastier. From water to caesar salad, lemon is my favorite thing to add to a variety of recipes.
Bursting with freshness, lemon adds zest to fish, desserts and afternoon tea.
This weekend we were celebrating my boys’ birthdays and my future father-in-law. With multiple birthdays we had family over for dinner. With an Italian themed meal, I was searching for the perfect cake to bake.
After running errands and getting groceries I was pressed for time so decided to make cupcakes.
I grabbed a white cake mix from the shelf, got out my Microplane and lemons and set to making a delicious batch of Lemon Cupcakes.
While I haven’t always been a fan of lemon desserts I absolutely love the light, tart and citrus flavor of these cupcakes. Delicious in any season.
Pair a beautiful cupcake liner with some fresh fruit topping and these simple cupcakes become the star of the show.
Lemon Cupcakes
1 box white cake mix
3 eggs
1 cup milk (or water)
1/3 cup vegetable oil
Juice of 1 lemon
Zest of 1 lemon
Directions:
Make cupcakes according to box directions.
Add in juice and zest of lemon and stir until mixed.
Spoon batter into lined muffin cups and bake at 350F for 18-20 minutes.
Allow to fully cool before icing.
Delicious light and fluffy lemon cupcakes topped with lemon curd buttercream. Perfect any time of year. Start with a boxed white cake mix.
- 1 White Cake Mix
- 3 Eggs

Lemon Buttercream Icing
1/4 cup Lemon Curd
1/2 cup Butter
2 cups Icing Sugar
Pinch of salt
*Makes enough for 7-8 cupcakes – double the recipe for more!
Directions:
Add butter and icing sugar to stand mixer. Mix until blended.
Add lemon curd and pinch of salt. Mix until light and fluffy.
A delicious buttercream based frosting made perfect with lemon curd. Easy to make and made with simple ingredients.
- 1/4 cup Lemon curd
- 1/2 cup Butter
- 2 cups Icing Sugar or powdered sugar
- Pinch of salt
