Our Spicy Salsa Instant Pot Chicken is perfect on top of tostadas or as the filling for the best tacos in town.
The inspiration for this recipe came from a night I was craving tacos. And since I’m following Weight Watchers I wanted a Mexican Meal with low SmartPoints value. Since each item in this Instant Pot chicken recipe is zero points the whole dish is Zero SmartPoints!

Weight Watchers Spicy Salsa Instant Pot Chicken
The key to dinner success for me and the ability to stay on track is being able to make a recipe that is fast, delicious and low in SmartPoints. Our Instant Pot Chicken is absolute perfection with simple ingredients you have in your kitchen.
Pair the chicken with a nice salad, some raw veggies or but some iceberg lettuce to eat it in a crispy and crunchy lettuce wrap.
Ingredients:
4 chicken breasts
1/4 tsp garlic powder
1/8 tsp oregano
1/8 tsp cumin
1 can green chilies (I used Old El Paso)
1 1/2 cups salsa (I used Pace Chunky Mild)
Serve with Charras Tostados Jalapeno (2 SmartPoints each) or Iceberg Lettuce.
Directions:
Place chicken breasts in the bottom of the Instant Pot.
Sprinkle with garlic powder, oregano, and cumin.
Open green chilies and spread over chicken.
Add salsa.
Set Instant Pot for 20 mins on HIGH pressure.
When done, quick release or natural release steam.
Place chicken and any sauce into a bowl.
Pull chicken with two forks
*You could also slice the chicken and serve as is, but pulled with the sauce mixed in is perfectly delicious!
A delicious Weight Watchers friendly Instant Pot Chicken breast recipe made spicy with green chilies and salsa. Fantastic on tostadas with fresh lime juice.
