Butternut squash soup is one of my favorite soup recipes.
We love to include sweet potato and apples into our Instant Pot Butternut Squash Soup for added flavor, depth, and more delicious nutrients.
Add in some coconut milk, curry powder, ginger, and cinnamon for a perfectly delicious butternut squash soup made super quick with the Instant Pot.
We made this vegan soup recipe by using vegetable broth and coconut milk – both add great flavor to the soup and remove all animal products from the soup.
Perfect for your Meatless Monday meal or a delicious soup for lunch or dinner.
Vegan Butternut Squash, Sweet Potato, and Apple Soup
Instant Pot Soup Ingredients:
1 Butternut Squash peeled, seeded and cubed
1 Medium sweet potato, peeled and cubed
1/2 Large white onion, cubed
2 Granny Smith apples, peeled, seeded and sliced
1 can Coconut Milk (13.5 oz/398ml)
1 900ml Vegetable Broth
1 tsp Curry Powder
1/4 tsp Cinnamon
1/4 tsp Ground Ginger
Pinch of Ground Pepper
Butternut Squash Soup Directions:
Prepare squash, sweet potato, onion and apples – set aside.
Place coconut milk, broth, curry powder, cinnamon, ginger and pepper in Instant Pot.
Add chopped vegetables to Instant Pot.
Ensure vent is set to “steaming,” close and lock lid.
Using the soup button set time for 15 minutes on High pressure.
Once cooking time is completed release steam, and open lid (remember it will be HOT!)
Transfer to a blender to puree or use an immersion blender to create a smooth soup.
Optional: top with pumpkin seeds and a drizzle of honey.
Serve and enjoy.

The finished soup has a beautifully smooth texture, thicker than a slow cooker soup making it hearty and satisfying. Serve with your favorite fresh bread, of a salad.
