Chicken, Tomato, Basil and Cheese Pesto Pasta Recipe

Finding delicious easy to make dinner options are challenging with two young boys. They aren’t always open to trying new foods and I am always looking for ways to change our meals and offer more than just lean protein and vegetables for dinner. When I was asked to give Oliveri’s Basil and Cheese Pesto a try I was instantly inspired to create a meal that included delicious Oliveri’s pasta, chicken, and pesto. The result was this incredible Chicken, Tomato, Basil and Cheese Pesto Pasta Recipe that received rave reviews from the whole family.

Chicken, Tomato, Basil and Cheese Pesto Pasta Recipe

Ingredients: 

1 tbsp coconut oil
2 boneless, skinless chicken breasts cut into strips
80g or half of an Olivieri Basil and Cheese Pesto container
1.5 cups whole grape tomato
1 package of Olivieri Artisan Tomato Caprese with Fresh Buffalo Mozzarella Ravioli
1 tbsp garlic spice or 1 garlic clove minced.
Option: fresh basil or parmesan for serving

Directions: 

In a small frying pan add coconut oil and melt.
Add chicken, and garlic and cook for 5 minutes stirring often.
Meanwhile, bring a medium sized pot to a boil.
Add tomatoes to chicken and continue to cook until chicken is cooked through.
Once water is boiling add pasta and cook according to directions.
Drain pasta and add to a medium-sized bowl.
Add pesto and toss.
Add chicken and tomato mixture and toss.
Serve immediately.

    We had Olivieri pasta and pesto sauce tonight. LOVE it because it is so easy and reliable. I tell my older daughter to make them when I am running Ainsley to her therapy riding lesson and come back and we have dinner made. Easy enough for teen. Tasty enough for all of us. I think my pesto is different than this. I will look for this one.

    It’s been a while since I tried any Olivieri products; I did notice the other day, while in the grocery store, the new and vast number of products they had added to their line. Like that the flavours and products are more sophisticated and diverse; I will have to try this recipe and give their newer products a shot. Thanks!
