Growing up my mom always made Cherry Mini Cheesecakes for parties and potlucks. Small, easy to eat, easy to make and perfectly festive anytime of year. They were one of my mom’s specialities and I hadn’t really thought about them for a few years until recently when mom mentioned someone asked her about them. It was apparent that people still loved them. A few days after that conversation when faced with creating a dessert for a dinner party it was the perfect time to make a batch of these family favourites. At just 20 minutes to make it was time to renew the Mini Cherry Cheesecakes on the party circuit! Delicious paired with Brown Sugar Glazed Ham or Bacon Wrapped Chicken Breasts Stuffed with Blue Cheese and Figs.
Cherry Mini Cheesecakes
Ingredients:
12 vanilla cookies (I used Golden Oreos)
1 brick of light cream cheese (250 grams), softened
1/2 cup sugar
1 egg
2 tbsp lemon juice
1 tsp vanilla
1 can cherry pie filling
You will also need:

Preheat oven to 350C and line muffin cups with paper liners.
In a [easyazon_link identifier=”B00005UP2P” locale=”US” tag=”famfooandtr06-20″]stand mixer[/easyazon_link] whip together softened cream cheese, sugar, egg, lemon juice and vanilla until smooth.
Place a vanilla cookie in the bottom of the muffin liner.
Pour cream cheese mixture in each cup until 2/3 full.
Bake for 15-20 minutes, until cream cheese mixture is set and an inserted toothpick comes out clean.
Set aside to cool (at least one hour).
Top with cherry pie filling and serve.
Can also be stored covered in the fridge for 5-6 days.

I cannot make these at all! I would just end up eating all of them. Maybe convert the recipe to a full size cake? Nope that won’t work either…I would eat it in just one sitting.
