Cherry Mini Cheesecakes

So easy to make whip up some of these Cherry Mini Cheesecakes for dinner, a potluck or a party!

  • 12 vanilla cookies I used Golden Oreos
  • 1 brick of light cream cheese 250 grams, softened
  • 1/2 cup sugar
  • 1 egg
  • 2 tbsp lemon juice
  • 1 tsp vanilla
  • 1 can cherry pie filling
  • You will also need:
  • Muffin cup liners
  • 12 cup muffin pan


  1. Preheat oven to 350C and line muffin cups with paper liners.
  2. In a stand mixer whip together softened cream cheese, sugar, egg, lemon juice and vanilla until smooth.

  3. Place a vanilla cookie in the bottom of the muffin liner.
  4. Pour cream cheese mixture in each cup until 2/3 full.
  5. Bake for 15-20 minutes, until cream cheese mixture is set and an inserted toothpick comes out clean.
  6. Set aside to cool (at least one hour).
  7. Top with cherry pie filling and serve.
  8. Can also be stored covered in the fridge for 5-6 days.
