With summer around the corner, these Ice Cream Cone Cakes are absolutely perfect for picnics, BBQ’s and camping. You just need a few simple ingredients and you have the perfect summertime dessert. Plus, unlike ice cream cones you can make these ahead of time making them perfect for large groups and parties. And, while you might think that these would just be a kids favourite, in fact, adults love them just as much!
Grab your favourite ice cream cones and get ready to create this delicious and fun dessert.
- 1 box Cake Mix + Box Ingredients
- 24 Ice Cream Cones
- 24 Maraschino Cherries
- Sprinkles
- 1 cup softened Butter
- 3 cup Powdered Sugar icing sugar
- 1-2 tbsp Milk
- 1 tsp Vanilla

Preheat oven to 350.

Mix cake batter according to box directions.

Fill ice cream cones about half full of cake batter.

Place cones in muffin pan and bake about 21-24 minutes or until toothpick inserted in center comes out clean.

Set aside and allow to cool completely.

In a stand mixer whip butter and vanilla until fluffy.

Then, gradually add powdered sugar and mix thoroughly.

Add milk until you reach desired consistency.

Transfer icing to piping bag and frost each cupcake to look like soft serve.

Top with sprinkles and a cherry.
