Clementines are one of my favourite fruits. I love how compact they are and portable and full of flavour. Have you ever tried cooking with Clementines? Now’s your chance. These Clementine Mini Tarts are the perfect dessert for entertaining. Individual sized, bursting with citrus and great to make ahead. Whether you are looking for a Winter treat or a Springtime citrus dessert these are perfectly delicious.
Clementine Mini Tarts
INGREDIENTS
6 Mini Graham Cracker Pie Crusts
4 oz softened Cream Cheese
1/4 cup Sugar
1/4 cup pureed Clementine segments (about 1 1/2 Clementines)
1/8 tsp Clementine Zest
1 beaten Egg
6-12 Clementine segments as garnish
1/4 tsp Ground Ginger
DIRECTIONS
Preheat oven to 350.
Beat cream cheese and sugar until blended.
Add egg and ground ginger and pureed Clementines and mix until blended.
Place crusts on a baking sheet.
Pour mixture into crusts.
Bake 20 minutes.
Cool for 20 minutes.
Refrigerate at least 1 hour before serving.
Top with whipped topping, clementine segments and zest for garnish.
