															Mini Graham Cracker Pie Crusts

										softened Cream Cheese
									
 
								- 
										1/4
															cup
										Sugar
									
 
								- 
										1/4
															cup
										pureed Clementine segments
										about 1 1/2 Clementines
									
 
								- 
										1/8
															tsp
										Clementine Zest
									
 
								- 
										1
															beaten Egg
									
 
								- 
										6-12
															Clementine segments as garnish
									
 
								- 
										1/4
															tsp
										Ground Ginger
									
 
							
		 
	 	 
				
		
				
						
								- 
										
Preheat oven to 350.
														 
								- 
										
Beat cream cheese and sugar until blended.
														 
								- 
										
Add egg and ground ginger and pureed Clementines and mix until blended.
														 
								- 
										
Place crusts on a baking sheet.
														 
								- 
										
Pour mixture into crusts.
														 
								- 
										
Bake 20 minutes.
														 
								- 
										
Cool for 20 minutes.
														 
								- 
										
Refrigerate at least 1 hour before serving.
														 
								- 
										
Top with whipped topping, clementine segments and zest for garnish.
