Chicken is out go-to dinner at my house and this recipe is an absolute family favorite. It is delicious the evening you cook it – and even better sliced cold over salad the next day. As a busy mom, I love when recipes can be made in bulk and enjoyed in other meals. I also love that it is gluten-free and uses cereal we always have on hand. Just a few simple ingredients and you can make this Parmesan Crusted Chicken – a spectacular chicken dish.
The flavor of the parmesan really comes through once cooked. It’s a delicious dinner everyone will love. Perfect baked chicken with a slightly crispy coating.
Gluten Free Parmesan Crusted Chicken
Ingredients:
4 skinless boneless chicken breasts
2 tbsp yellow mustard
1 tsp dried parsley
1 cup fresh grated parmesan (I did mine on a microplane for a fine grate)
3/4 cup crushed Chex cereal
1 tbsp Club House Garlic Plus
dash Tabasco
salt and pepper
cooking spray or parchment paper
Directions:
Preheat oven to 450F
In a small bowl mix together mustard, parsley, Tabasco, garlic plus, salt and pepper. Set aside. In another small bowl mix together parmesan cheese and crushed cereal.
Add the chicken breasts to the mustard mixture and coat both sides. Then place each breast in the cheese mixture until fully coated (press mixture into the chicken with your hands).
Place each coated chicken breasts in a baking dish coated with cooking spray or lined with parchment paper.
Bake until chicken is fully cooked – approximately 30-40 minutes depending on the thickness of the chicken breast.
Serve with your favorite sides. Cover any leftovers and store in the refrigerator. They are delicious cold sliced over a salad.
