My mornings are hectic. Very hectic. Getting my twin 4-year-olds out the door and off to Junior Kindergarten while I get myself ready for work requires planning, organization, and a quick easy breakfast. Our Blueberry Almond Ginger Smoothie is the perfect on-the-go breakfast recipe.

Blueberry Almond Ginger Smoothie
1 cup almond milk
1 cup blueberries
1 tbsp honey (omit if using sweetened almond milk)
1 tsp grated fresh ginger
4-5 ice cubes (optional)
Add all ingredients to Vitamix and blend on medium speed until combined. Once thoroughly mixed add ice cubes if you desire a thicker smoothie. Blend until ice is fully crushed and serve immediately.
I love this smoothie because it combines the antioxidants of blueberries, healing properties of ginger and honey and the dairy-free protein of almond milk. Whether you make this for breakfast or an after school snack I can guarantee you will make it more than once.
