This weekend we decided to have a casual dinner outside with some Oven Baked Ribs, local green beens and roasted potatoes. Our farm share this week gave us three beautiful poblano peppers so we decided to make a traditional Mexican side dish typically served in a taco with sour cream, or as a side dish topped with cheese. If you are looking for a spicy potato side dish for your next BBQ or cookout? You will love these Roasted Potatoes with Poblano Peppers known as Papas con Rajas in Mexico.
- 1 lb mini potatoes with skin
- 1/2 sweet onion
- 3 poblano peppers
- 1 very ripe jalapeno pepper will have changed from green to red
- 2 tbsp olive oil
- Pinch of rosemary
- salt to taste
-
Boil potatoes until they are fork tender (approximately 20 mins)
-
Cool potatoes completely under cold water and set aside.
-
Slice onion really thin and broil the poblano peppers (charred evenly all around, approximately 5 mins)
-
Place poblano peppers in a plastic bag and let rest for 5 mins.
-
Take peppers out of bake, cut to take the seeds out and peel the skin off.
-
Cut skinned pepper into strips.
-
Cook onions in a hot pan without 2 tbsp water (no oil).
-
Cook onions until translucent.
-
Add poblano pepper strips and minced jalapeno pepper.
-
Cut potatoes into pieces and toss in a bowl with onions and peppers.
-
Add olive oil, rosemary and salt and toss to combine.
-
Add mixture to a baking dish and broil for 15-20 mins or until potatoes start to crisp.
-
Serve immediately or let cool slightly before making it into a taco.

Yum! I would have never imagined putting potatoes and poblano peppers together, but it sounds so tasty. I am definitely going to make that as one of our side dishes. Pinned!
