When I volunteered to make birthday cupcakes for a special guy in my life I was unsure what to make. I thought of a cake first, but wanted to try something different with a flavour I knew he’d enjoy. These Baileys Chocolate Cupcakes with Baileys Buttercream Frosting were the result. Perfectly rich, perfectly chocolatey and just the right hint of Baileys Irish Cream.
Baileys Chocolate Cupcakes
Ingredients:
1.5Â cups flour
1 cup unsweetened dark chocolate cocoa powder
1 teaspoon baking soda
1/4 tsp salt
1 1/4 cup granulated sugar
1/3 cup vegetable oil
1 large egg
1Â cup buttermilk
1/4 cup Baileys
Directions:
Preheat oven to 350C
In a small bowl whisk together flour, cocoa, baking soda and salt. In a large mixing bowl mix together sugar, oil, egg and buttermilk. Whisk until smooth.
Add flour mixture in small batches whisking until completely mixed between each batch. Once thoroughly mixed add Baileys and mix again.
Pour cupcake mixture into cupcake liners until 3/4 full. Â Bake for 18-20 minutes or until an inserted toothpick comes out clean.
Makes 12-14 cupcakes

Bailey’s Buttercream Frosting
Ingredients:
1/2 cup butter
3 cups icing sugar (powdered sugar)
1/8 cup Bailey’s Irish Cream
1/4 tsp salt
Directions:
Using a hand mixer combine butter, sugar, Bailey’s, and salt mixing until light and fluffy. If not desired stiffness add more icing sugar until the consistency you desire. Top with a sprinkle of chocolate sprinkles.
