1.5cupsflour
1cupunsweetened dark chocolate cocoa powder
1teaspoonbaking soda
1/4tspsalt
1 1/4cupgranulated sugar
1/3cupvegetable oil
1large egg
1cupbuttermilk
1/4cupBaileys Irish Cream
Instructions
Preheat oven to 350C
In a small bowl whisk together flour, cocoa, baking soda and salt. In a large mixing bowl mix together sugar, oil, egg and buttermilk. Whisk until smooth.
Add flour mixture in small batches whisking until completely mixed between each batch. Once thoroughly mixed add Baileys and mix again.
Pour cupcake mixture into cupcake liners until 3/4 full. Bake for 18-20 minutes or until an inserted toothpick comes out clean.
