Packed with all my favorite ingredients this Slow Cooker Chicken and Black Bean Soup with Quinoa is a hearty meal in a bowl that is filling without being heavy.
The delicious tomato-based broth is the perfect base for the chicken, sweet potatoes, black beans, and quinoa. Soup perfection!
Plus, since it’s made in the slow cooker you can add the ingredients in the morning and come home to a perfect dinner and lots more for the freezer or lunches.

Slow Cooker Chicken and Black Bean Soup with Quinoa
Ingredients:
4 cups chicken broth (from a tetra pack)
2 cups chicken broth (from bouillon)
2 chicken breasts
2 cups of hydrated black beans
1 cup of quinoa rinsed
3 cups cubed sweet potato (peeled)
1 can diced tomatoes with Herbs and Spices (28oz)
1 tsp garlic salt
1 tsp cumin
1/2 tsp ground coriander
Directions:
Place all ingredients in a Slow Cooker and set on high for 4 hours or on low for 6 hours.
Serve with chopped cilantro and a side of fresh bread.
Portion out leftovers and freeze for later.
