I’ve been craving Asian dishes lately but with a focus on eat whole foods and healthy eating ordering take out is not the best option. Instead I took on the challenge of creating a slow cooker meal I could make that would satisfy those cravings. This recipe is quite sweet because of the canned pineapple. For a less sweet version try using fresh pineapple instead.
Slow Cooker Sweet & Sour Pineapple Chicken
Ingredients:
1 cup chopped red onion
1/4 cup packed brown sugar
1/3 cup ketchup
1/4 cup orange juice
3 tbsp cider vinegar
3 tbsp reduced sodium soya sauce
1 tsp fresh grated ginger
4 chicken breasts cut into 1 inch cubes
1 large can of pineapple chunks in juice (drained)
3 large carrots in thick slices
dash of Tabasco
pinch of salt
pinch of pepper
Directions:
Add onion, chicken cubes, pineapple chunks and carrots to slow cooker. Then, In a large bowl whisk together brown sugar, orange juice, ketchup, vinegar, soya sauce and ginger. Pour sauce over the vegetables and chicken and turn slow cooker on. Cook 6 hours on low or 4 hours on high stirring once during cooking to ensure chicken is coated. 15-30 minutes before serving add dash of Tabasco, pinch of salt and pepper. Stir and return to cooking.
Serve over rice.
My family loved this meal as much as I did and it produced enough left overs for another meal. Perfect for a busy night when you want to get a nutritious filling meal made quickly. Love the convenience of the slow cooker!
