After a very long Winter, I am SO ready for signs of Spring.
If you are feeling the same way then these Easter Bunny Cupcakes are the perfect solution.
Easy, adorable and made with simple ingredients they are perfect for Easter, birthday parties and Spring celebrations.
I love that you can create these Bunny Cupcakes using your favorite cupcake recipe and with only a few ingredients they come together easily and can be decorated by little hands for a fun interactive dessert. You could even make decorating your bunny as part of your Easter tradition. I’m sure your family could come up with some fun and creative variations of these ones.
We also love serving these bunnies with our Pink Marble Cupcakes as a bright and cheerful Spring dessert display that looks wonderful beside a bowl of our Silk Tie Easter Eggs.
Our favorite Easter traditions center around family, food, and church. Whether it’s our annual neighborhood Easter Egg Hunt or a delicious Easter ham it is so much fun to gather with family and celebrate all that Easter brings. Once we’ve decorated our Easter Eggs it’s time to make some cupcakes and have my boys help make these cupcakes. I’ve also made this recipe for school bake sales. Kids love animal themed cupcakes any time of the year.
Easter Bunny Cupcakes
What You’ll Need:
- Cupcakes – we love our Pink Marble Cupcakes
- Vanilla Frosting
- Medium sized marshmallows
- Mini Chocolate Chips
- Pink Skittles
- Coconut
- Pink Sparkling Sugar
- Cupcake/Muffin Pan
- [Cupcake Liners
Directions:
Make your favorite cupcakes (we used Buttermilk Cupcakes) and Buttercream Icing
Pour coconut into a bowl and dip iced cupcakes into coconut until covered.
Pour pink sprinkles into a shallow dish. Then, cut a marshmallow on a diagonal and dip the sticky side into sprinkles until coated.
Attach marshmallow ears with a dab of icing on the bottom.
Finally, place two Mini Chocolate Chips as eyes and attach a Pink Skittle for a nose (I attached with a tiny dab of icing)
Growing up I had an adorable bunny named Buffy. He was an albino rabbit with white fur and pink eyes. He started off small then grew to be a large rabbit that lived outside. I loved that bunny so much!
Making these cupcakes reminds me of Buffy, Easter and everything about Spring.

I love that these cupcakes can be used for a spring event, Easter or even a bunny themed birthday party. Cute, easy to make and they really add personality to your table.
