Making food for my family that they will love brings me great joy. I love to create new and exciting recipes or a make a twist on a family favourite. From hosting dinner parties to holiday meals they are all so fun. Having a houseful of friends/family enjoying great food warms my heart. As a kid family gatherings have included a variety of special desserts. From a tower of cream puffs to traditional Christmas pudding we’ve enjoyed a variety of desserts. While I love rich desserts my favourites are fruit based or desserts that aren’t too heavy. I love crisps, and trifles especially after a big holiday meal. And, they make great desserts to take to a potluck.
When I was challenged by President’s Choice to make a twist on a holiday recipe using the new products form the Holiday Insider’s Collection I needed to decide what part of a holiday meal I’d like to do a ‘makeover’ of. While I thought about creating a new unique way to cook a turkey I settled on everyone’s favourite part of the meal – dessert!
While I don’t have my grandmother’s trifle recipe I remember the flavours it encompassed and what I wanted the key ingredients to be. Thus was born our Easy Lemon Cookie Trifle Recipe.
Easy Lemon Cookie Trifle Recipe
Ingredients:
1 pound cake
2 x 500 g PRESIDENT’S CHOICE CREAM ON TOP LEMON 6% M.F. YOGURT
1 box SWEET & SAVOURY SMOKY PECAN AND TOFFEE COOKIE THINS
Maple syrup
Whipped cream
Grated lemon zest (for garnish)
Directions:
Cut pound cake into finger-like slices and layer one enough to cover the bottom of your trifle dish.
Cover the pound cake with Lemon Yogurt then, drizzle with maple syrup.
Top yogurt with Smoky Pecan and Toffee Cookie Thins.
Repeat for one or two more layers (depending on the size of your pound cake).
Top with whipped cream, lemon zest and a cookie for garnish.
