Curried Sweet Potato Soup
Ingredients:
4 medium sized sweet potatoes (peeled)
1 small yellow onion, sliced
1 garlic clove, minced
1 can light coconut milk
2 cups sodium-reduced chicken broth
 1/2 tsp fresh grated ginger
1/2 tsp cumin
1/2 tsp coriander
1 tsp medium curry powder
1 tsp lime juice
Garnish with pumpkin seeds, toasted coconut and/or fresh cilantro.
Directions:
Place sweet potatoes in a microwave safe dish, puncture with a fork a few times. Microwave on high for 5-8 minutes until tender when pierced with a fork.
Place sweet potatoes, onion, garlic, coconut milk, chicken broth, ginger, cumin, coriander, and curry powder in a Kenmore Heavy Duty Professional Blender blending until smooth.
Continue to blend on the highest setting for 5 minutes or until soup is hot throughout.
Add lime juice and blend until smooth.
Serve with garnish and fresh bread for a delicious meal.
