If your evenings look like mine I’m sure you feel rushed, overwhelmed and a bit puzzled about how to get a nutritious dinner on the table fast! I have found the answer in the HelloFresh Family Box – a unique and delicious box of food with everything you need to create a meal your family will love. Most meals take under 30 minutes to make allowing for a great meal any night of the week. The HelloFresh Family Box provides three full meals for four people making it ideal for a family or a couple who loves to entertain/have leftovers.

Hello Fresh Family Box Pan Seared Chicken

Pan-Seared Chicken with Roasted Potatoes, Green Beans and Creamy Mustard Sauce

Ingredients:

4 Chicken Breasts
680g Mini Yukon Potatoes
1/2 cup Sour Cream
340g Green Beans
2 tsp Dijon Mustard
1 tbsp Chicken Broth Concentrate
Olive Oil
Fresh ground Sea Salt
Fresh ground Pepper

Directions:

Preheat oven to 450F.

Bake the potatoes: wash and cut potatoes into 1/2 inch cubes. Toss them on a baking sheet with a drizzle of olive oil and a pinch of salt and pepper. Bake in the centre of the oven, stirring halfway through cooking until crispy and golden brown, 25-30 minutes.
Cook the green beans: Bring a medium pot of water to a boil. Wash, trim and dry green beans. Add to boiling water and cook for 1-2 minutes, until tender-crisp. Drain.
Cook the chicken: Season the chicken with salt and pepper. Heat a large pan over medium heat. Add a drizzle of oil, then the chicken. Cook for 5-6 minutes per side, until golden brown and cooked through. Transfer to a plate and let rest for 5 minutes.
Make the sauce: Reduce the pan to low heat. Add the sour cream, mustard, 1/4 cup water, and chicken concentrate. Stir to combine and cook for 1-2 minutes.
Finish and serve: Thinly slice the chicken and serve alongside the roasted potatoes and green beans. Drizzle with sauce. Garnish with fresh herbs and enjoy!

    My mom works as a janitor and doesn’t get home until 10:30 PM on week nights so it’s difficult for her to have motivation to make dinner before her shift because her down time doesn’t start until morning the next day. Hello Fresh would be greatly appreciated and highly convenient for our family because of the time it takes to prepare as well as the nutritional value it will provide.

    I prepare dinner every night and it is time consuming having to prep every step. I would love to have it already to go and know that this is a healthy meal versus one full of preservatives and additives I can’t even pronounce

    With the busy schedule we have with 2 working parents, school 3 towns away, Girl Guides & Brownies (I’m a Guider too), figure skating 2x per week, french (FI school) and english homework every night + housework etc, finding time to shop and cook nutritious meals can be a challenge especially with only one parent that cooks in the house (moi).
