Deliciously sweet and surprisingly light and fluffy these Cream Soda Cupcakes have only two ingredients! Just a box of cake mix and a can of cream soda. The result is a cupcake that is sweet but not overbearing, a light cupcake that has a texture similar to angel food cake. Plus it’s pink! Perfect for a party, a baby shower, afternoon tea or a sweet snack.
I made these cupcakes to take for a fun outdoor lunch with a friend. With four kids ranging in age from eleven to six I wanted some versatile that kids would love and the adults too. These were a success! The kids ate them so quickly and quietly it was hard to believe that they even had any. Plus, they were perfect for a picnic. And with the super cool Cream Soda Cream Cheese Icing the hint of pink was the ideal topping not too sweet and a little tangy. Top with your favourite sprinkles and they are perfect.
Cream Soda Cupcakes
Ingredients:
1 box white cake mix
1 can Crush Cream Soda
Directions:
Preheat to 350C
Add dry cake mix to a bowl and top with cream soda. Whisk the ingredients together until thoroughly combined.
Fill cupcake liners 2/3 full and bake according to cake mix directions. 18-20 minutes until insert toothpicks comes out clean.
Allow to cool fully on a wire rack before icing.

250 g softened cream cheese
1 tbsp lemon juice
6 cups icing sugar
4 tbsp cream soda.
Directions:
Mix butter and cream cheese in a stand mixer until whipped together.
Add lemon juice and icing sugar (by cup) until fully mixed.
Add cream soda and whip until light and creamy.
Add more icing sugar if thicker consistency is desired.
The most delicious cream cheese icing with the perfect compliment of sweetness. Delicious on the Cream Soda Cupcakes!
