After school snacks are a challenge in our household. With my hectic schedule and two busy (and hungry) boys I am always looking for something that will be delicious and filling. My boys’ favourites are cookies with fruit and/or yogurt. I love to make the cookies homemade so I know exactly what’s in them. With Peanut Butter and Honey being a favourite sandwich at our house, these Peanut Butter and Honey Oatmeal Cookies are the perfect combination of sweet and satisfying. I love that Kraft Peanut Butter is so versatile (it’s not just a spread, it’s an upgrade!) and can be used in everything from cookies to cakes, soups to stir-frys. It can make everything taste so much better. We also love it on apples, in sandwiches and on crackers. I decided to make a protein-filled on-the-go snack that’s perfect for after swimming lessons or on the way to Ball Hockey. And I love that the boys can help me too! Peanut Butter and Honey Oatmeal Cookies
Ingredients:
1/2 cup salted butter (softened)
1 cup brown sugar (packed)
1 egg
1 tbsp vanilla
1/2 cup Kraft Peanut Butter with Honey
1 cup all-purpose flour
1/2 tsp baking soda
1 cup old-fashioned oats
pinch of salt
Directions:
Preheat the oven to 350F.
In a stand mixer with paddle attachment combine butter and brown sugar mixing until creamy (about 2 minutes).
Add in egg, vanilla and Kraft Peanut Butter with Honey mixing until fully combined.
In a separate bowl combine flour, baking soda, oats and salt.
Add dry mixture to stand mixer until fully combined.
Scoop batter with a small ice cream scoop onto parchment lined cookie sheets.
Baked from 11-12 minutes or until brown on edges.
Remove from oven and let stand for 5-10 minutes until cooled.
Store in an air tight container.
