Our family loves seafood but sometimes I find it hard to serve seafood in a way I know my boys will eat it that is quick, easy and ready fast. Since my family loves shrimp we created this recipe to satisfy my desire to get more seafood into our diet and my boys desire to eat more pizza! Plus with pizza you can add delicious vegetables, cheese and your favourite toppings. We kept ours simple but feel free to customize your Shrimp Scampi Pizza to include your favourites. I love the smell of the Shrimp Scampi cooking. The aroma transports me to the coast and eating seafood with my family on vacation. Get ready to dive in to a slice of awesome.
Shrimp Scampi Pizza
Ingredients:
1 package SeaPak Shrimp Scampi
1 pizza crust – store bought or homemade
olive oil
1/2 of a red pepper, roasted & diced (about ¼ cup)
1 cup shredded mozzarella cheese
Dried parsley
Directions:
Preheat the oven to 400 degrees or the temperature recommended on your pizza crust package.
Cook the SeaPak Shrimp Scampi according to package directions
Lightly brush the pizza crust with olive oil.
Once the shrimp has finished cooking, remove the shrimp from the pan & roughly chop into smaller pieces.
Spoon the scampi sauce from the pan onto the pizza crust using as much or as little to suit your taste preference. Top the pizza with the chopped shrimp. Then add the diced roasted red peppers. Then top the pizza with the cheese & a sprinkle of dried parsley.
Bake the pizza according to the crust package directions until golden brown & the cheese is melted, typically about 8-10 minutes for a store bought pizza crust.
Serve hot.
