The combination of chocolate and cherry has long been a favourite of mine. My grandmother used to eat those [easyazon_link identifier=”B00HD41I8E” locale=”US” tag=”famfooandtr06-20″]Chocolate Covered Cherry chocolates[/easyazon_link] and I loved them. They were so intensely sweet and filled with that cherry syrup. I can just see myself biting into one now and slurping on it. Not the most attractive image but delicious all the same!
I created this recipe for Chocolate Covered Cherry Cupcakes to bring together those two favourite flavours but without the intense sweetness. Instead these cupcakes are the perfect balance of chocolate and cherry. A perfect dessert for a special dinner or a Valentine’s Day treat. If you are making Chocolate Covered Cherry Cupcakes for kids omit the Bailey’s and add some [easyazon_link identifier=”B00J7YUBFO” locale=”US” tag=”famfooandtr06-20″]cherry flavouring[/easyazon_link]or the syrup from a jar of [easyazon_link identifier=”B004X7BTPG” locale=”US” tag=”famfooandtr06-20″]maraschino cherries[/easyazon_link].
Chocolate Covered Cherry Cupcakes
Make a chocolate cake mix from a box or use our Chocolate Cupcake recipe.
Buttercream Ingredients:
1 cup salted butter
3 cups icing sugar
1/3 cup cocoa
1/4 cup Bailey’s Chocolate Cherry
1/4 cup fresh or frozen cherries
1 tbsp vanilla
1 tbsp lemon juice
pinch of salt
Buttercream Directions:
Place butter, icing sugar and cocoa into a stand mixer and beat on low until combined.
Add Bailey’s and cherries and beat for until smooth (note finely chop cherries first!)
Add in vanilla, lemon juice and salt and mix until it becomes fluffy.
*With the chunks of cherries this frosting is hard to pipe through a piping bag. Spread on with a knife, top with some whipped cream and a cherry.
