Last September we embarked on the first year of full time school for my boys. Junior Kindergarten was a learning experience for all of us. From morning routines and lunch box packing to navigating the school bus and after school activities. In September and October I loved making lunches and found it fun to put together. After a couple of months I was frustrated with lunches. The boys were bored of my choices and no matter how many times I asked what they wanted it seemed come lunch time it was not exactly what they wanted. Then, I changed things up. I cut fruit into shapes, I added cheese strings, and looked for options other than sandwiches. Success! Now with a bit of thought and lots of variety we have lunches they love and they are easy and healthy too.
In preparation for another school year we went to Walmart and picked up all the ingredients to make an easy balanced lunch my kids will love. I wanted to create something that wasn’t a sandwich but had staying power and pair it with fruit and veggies.
My first stop was to the middle seasonal aisle to get new thermos containers for the boys. They love Disney’s Cars so I grabbed two of those.
Next stop was the produce section to pick out some fruit and veggies. I grabbed apples, snap peas, strawberries and cantaloupe – all my boys favourites.
Then to the freezer/fridge section to get some cheese strings that the boys are crazy about.
Finally, to the aisle with pasta, canned fish and salad dressings. There I got pasta, tuna and Kraft Coleslaw dressing to make my Classic Tuna Salad.
Once I got home I was ready to assemble a delicious and healthy school lunch. I cut the melon into leaf shapes with cookie cutters, sliced the strawberries, washed the snap peas and apple and assembled the lunch.
The end result was a yummy lunch filled with a variety of fruit, veggies, carbohydrates and protein. Delicious!
