I can still remember as a kid the excitement of getting to lunch and opening your lunch box to see what’s inside. It was like a surprise everyday to see what my mom had packed. However there were those inevitable days when tuna salad or ham and cheese sandwich wasn’t what I wanted to eat for lunch. Â Thus the term “lunchbox letdown” was coined in our house. Last year, when my boys started school I was all excited to make lunches for the first 4 months, and then my excitement faded and it became more of a chore than a fun activity of packing them a nutritious lunch. We’ve rounded up recipes to avoid lunchbox letdown and keep lunches fun and exciting year round.
