Our family loves the fresh taste of lime and incorporate it in many of our dishes. This easy recipe for Lime Tortilla Crusted Baked Chicken is a new family favourite. An easy dinner and the leftovers make delicious wraps for school lunches. Lime Tortilla Crusted Baked Chicken
Slightly Modified from: Blue Tortilla Crusted Baked Chicken
- zest of one lime
- juice of half a lime
- 2 cups lime tortilla chips
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp black pepper, freshly ground
- 4 large skinless chicken breasts cut into strips
- Preheat the oven to 350°F (175°C).
- Prepare lime zest and juice half of the lime.
- Add the tortilla chips to the bowl of a food processor and pulse until you have fine crumbs. Add fresh lime juice, lime zest, ground cumin, chili powder, ground coriander and freshly ground black pepper and pulse again a few times or until well combined. Add seasoned crumbs to a clean plastic bag.
- Add skinless chicken breast strips to bag and shake to coat well.
- Spray baking pan with vegetable oil cooking spray. Place chicken on pan and bake in oven for 35-45 minutes until a thermometer reads 165°F (74°C). Serve on a bed of spinach or a salad.
