Tea has been a favourite of mine for years. I can’t remember if it was my best friend’s British mom or my step-father that first introduced me to tea. Whomever it was I am truly grateful! Tea is like a warm hug on a cold day and a refreshing drink on a hot afternoon. Whether iced or steeped, tea comes in so many varieties and flavours you can never get bored.
I have made tea flavoured cupcakes before but I was excited to create easy cookies flavoured with Alokozay Tea to serve when friends stop by. This cookies take only 15-20 minutes to make, cool quickly and taste divine dipped in a fresh cup of tea. Grab your tea pot and get ready for a taste adventure.
Butter Pecan Jasmine Tea Cookies
Ingredients:
1 box Gluten Free Butter Pecan Cake Mix (or Vanilla Cake Mix)
2 Eggs
1/4 cup milk
1-2 Alokozay Jasmine Tea
1/3 cup vegetable oil
Directions:
Preheat oven to 350F. In a large bowl, pour dry cake mix and set aside. Then, in a small saucepan on low heat warm milk. Add 1 or 2 tea bags (depending on strength of tea flavour) and allow to steep in the warm milk for 5 minutes. Remove and discard tea bags and set milk aside. In a small bowl whisk together oil and eggs and add to dry cake mix stirring until completely blended. Add milk and stir just until fully mixed. Drop cookie batter in tablespoonfuls onto a parchment lined or greased cookie sheet. Bake for 9 minutes. Allow to cool and serve with your favourite Alokozay Tea.

I use this same technique of steeping the tea in milk when I make whipped cream. Just steep in heavy cream, chill, and whip!
