Spring is a perfect time to get moving. The snow is gone (or almost gone) and with warmer weather, I feel like coming out of hibernation. I cannot wait for all the fresh local produce to come in and lazy Saturday mornings at the Farmer’s Market. Until then I am working on healthy foods like our (Chicken and Egg Breakfast Mug), long walks and extra play time with the boys outside. We’ve spent hours splashing in puddles already this Spring!
One of the great ways to make healthier choices is to choose lean cuts of meat. We always have lean Canadian chicken breasts in our freezer to pull out and make delicious meals any night of the week. And, I always cook extra when grilling or baking so that we have chicken to add to salad, stir-frys, and sandwiches the next day. Plus, chicken is naturally low in fat, sugar, and carbs. With the right side choices and toppings, you can adapt chicken to almost every dietary restriction/preference.
One of my favourite features of the Chicken.ca website is that you can complete recipe searches based on the type of recipe you are looking for. By doing so you are able to narrow by the cut of chicken you have on hand, your dietary needs and the meal you are searching for. A really valuable tool to narrow down the amazing recipe available. Like all search programs, you need to be careful not to get too specific! For me, this tool is invaluable as I search for recipes my mom can eat (needs to be low fat) and my best friend can eat (needs to be gluten-free).
I can search and come up with results that fit their requirements with just a few simple clicks. All recipes come up with beautiful photos so you know exactly what the recipe will look like. Â Check out these delicious gluten-free and lower fat recipe options:
While these looked divine I wanted to share with you one of my favorites from Chicken.ca – the Chicken and Egg Breakfast Mug because it is easy, sounds delicious and perfect for hectic mornings. I modified the recipe to add some parmesan, spinach and hot sauce.
Chicken and Egg Breakfast Mug
Ingredients:
A spray of Cooking Spray or 1/2 tsp olive oil
2 oz cooked chicken, diced
4-6 baby spinach leaves
1 medium egg
2 tbsp aged white cheddar
1 tbsp freshly grated parmesan
2 tbsp salsa (optional)
dash of hot sauce
Salt and pepper to taste
Directions:
Spray mug with cooking spray.
Place spinach leaves on the bottom and top with chicken.
In a small bowl add egg, cheddar and parmesan cheeses, hot sauce, salt, and pepper.
Beat together and pour over chicken and spinach.
Place in microwave for 1.5 minutes on HIGH until the egg puffs up and is cooked fully.
Top with Salsa (optional).
