Today is International Fig Newton Day and to celebrate I’ve created this divine Fig Blue Cheese and Apple Pizza. Every once in awhile I create something that is beyond delicious. This pizza fits into that category. It is delicious, full of flavour and is a sensational meal and a great appetizer. The phenomenal blue cheese cream sauce makes the perfect base for the marinated figs, salty proscuitto and sweet apples. The combination of flavours will surprise and impress you.
If you want to ‘lighten’ up this recipe swap out the blue cheese cream sauce with simple olive oil brushed on the crust and cut down on the amount of grated cheese. This pizza would also be delicious prepared on Naan, pitas or your own homemade pizza dough. Don’t love blue cheese? Swap it out with an aged cheddar.
While this recipe has a few steps to it I can guarantee it is worth the effort!
Blue Cheese Cream Sauce:
Ingredients:
1/16 cup butter
1/16 cup flour
1/2 cup milk
1/4 cup blue cheese (or less depending on personal taste preference)
Dash of salt and pepper
Directions:
Melt butter in a small saucepan and whisk in flour until combined. Add milk in stages then crumble in blue cheese. Cook over low heat until sauce thickens. Spread evenly on pizza base.
Fig Blue Cheese and Apple Pizza
Ingredients:
Blue Cheese Cream Sauce (recipe above)
1 Pre-made pizza crust
1 large apple
10 dried figs
1/4 cup Balsamic vinegar (I used a maple infused balsamic vinegar)
10 thinly sliced pieces of Prosciutto
1/4 cup crumbled blue cheese
1/2 cup grated aged white cheddar
1 cup loosely packed baby kale
Directions:
Remove stems and slice dried figs in half. Put in a small bowl and cover with balsamic vinegar.
Preheat oven to 350.
Place pizza dough in the oven for 5 minutes to crisp up the surface.
Remove pizza dough from oven and spread with Blue Cheese Cream Sauce.
Slice apple into thin slices and place around the pizza. Remove figs from balsamic vinegar and pat dry. Place figs around the pizza then top with proscuitto. Sprinkle aged cheddar around the pizza then crumble blue cheese. Place in the oven and bake 8-10 minutes until top is bubbly and cheese is melted. Top with baby kale. Serve immediately.
Once you've tried this pizza you will make it again and again. Love the combination of rich blue cheese with fresh apple and dried figs. Sweet and savoury.

Figs are one of my favourite savoury fruits. They are a good source of fibre Vitamin B6, potassium and are filled with nutrients but the best part is they are delicious and rehydrated in balsamic vinegar makes their flavour something really unique. Looking for other inspiring fig recipes check out:

I’m making this tomorrow. Did anyone think the blue cheese sauce along with the blue cheese crumbles on top was to much? I was debating using just garlic Olive oil for the sauce instead

I think that would be a great idea. A simpler version!
