Summertime is all about days at the beach, picnics and trips to the zoo. When we are home we love to sit out on our lawn, fill up the water table, enjoy a cool refreshing drink and have a snack. While some people love salty snacks I would have to save that a nice light sweet is my perfect summer treat. Growing up my grandmother made a delicious limeade that was a slight variation on lemonade. Well, bascially lemonade with limes! She made it with a homemade simple syrup and it had the most remarkable colour – like a yellow sports drink.
This summer we have lots of short trips planned and hope to spend Monday’s at our local beach and at least once a week at a park or playground. After a busy year I am looking forward to bring home, relaxing and enjoying the beautiful weather.
My recipe to celebrate summer is a Key Lime Chex Mix, a sweet treat with the tangy zest of key lime.
A sweet and tangy chex mix that bursts with flavour.
- 9 cups Rice Chex cereal
- 1 1/4 cups white chocolate baking chips
- 1/4 cup butter
- 4 tsp grated key lime peel
- 2 tbsp fresh key lime juice
- 2 cups icing sugar

Measure cereal into a large bowl, set aside.

In a microwave safe bowl put chips, butter, peel and juice uncovered on High for 1 minute; stir.

Microwave about 30 seconds longer or until mixture can be stirred smooth

Pour mixture over cereal, stirring until evenly coated.

Pour into 2-gallon resealable food-storage plastic bag.

Add icing sugar. Seal bag; gently shake until well coated. Spread on waxed paper or foil to cool. Store in airtight container.

My suggestion for anyone who makes this recipe is to ensure you have guests coming over – otherwise you will be tempted to eat the whole bowl! So deliciously addictive to snack on.

Wow..now this is something I would never have thought to make. My mum always used to make Key Lime Pie and it was a family fave. I bet these are delicious!

That sounds delicious! I have difficulty finding that cereal in stores. It’s tricky, but so versatile also and I really often want to make that treat. I am craving some key lime chez right now. This is a must try because it seems so unique.

Tried this but it came out poorly – putting lime juice in with the melting white chocolate chips made them turn into a gummy blob that wouldn’t spread over the cereal at all. I knew that would happen but I figured, what the hey? Maybe it’ll work. Nope! I’m going to try it again, without the lime juice, and see if it actually works. And I’m still gonna eat what I made, because it’s delicious, dangerously so.
I’m really sorry to hear that. I didn’t have any issues with melting the chocolate with lime juice. Maybe try to whisk in the juice after. Or, omit it and add more zest?
