Lime and White Chocolate are two of my favourite flavours so this weekend I decided to blend them together into a delicious scone so I could slather them in Gay Lea Foods Spreadables Butter.  I absolutely love using Gay Lea Spreadables because you can use them on any of your favourite breads or veggies without worrying about tearing the bread when spreading.  Perfect for my kids to spread some butter on their favourites too.

Delicious Spring scones with Lime and White Chocolate - perfect for an afternoon tea or brunch.
Course: Breakfast
Servings: 8

Ingredients
  • 1.5 cups all purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 cup white sugar plus more for dusting
  • 3/4 cup white chocolate chips
  • Juice of one lime
  • Zest of one lime
  • 1/2 cup Gay Lea Sour Cream
  • 1 cup Half and Half
Instructions
  1. Preheat oven to 450F
  2. Mix flour baking powder, white sugar, and white chocolate chips together.
  3. In a separate bowl mix lime juice, lime zest, sour cream and half & half.
  4. Add flour mixture to liquids slowly to ensure fully mixed.
  5. On a floured surface knead dough and form into a flattened ball.
  6. Cut into 8 wedges and place on a parchment lined baking sheet
  7. Sprinkle with sugar.
  8. Bake for 15 minutes until tops are golden.

Making the scones is easy and fun even for little hands to join in. One of my favourite memories as a child was baking with my mom and grandmother. Standing on a stool, mixing the dough or licking the spoon after a making an icing. Each one of those memories is imprinted in my mind as special and unique.

While society sometimes gets too caught up in fat percentage, sodium levels and carbohydrates I really believe that if you make your own food you will be making food that is good for you. These scones, while not complicated were made with love and topped with beautiful Gay Lea Foods Spreadables created by Canadian farmers. That is important to me. While there are days I wish I was someone who made their own butter and kept their own livestock for food, in the end I am always so thankful that a farming family nearby is creating wonderful food for me. This Spring as we relish the warmer weather, rejoice over more hours of sunlight take a moment to thank those that produce our food and teach your children that butter doesn’t just come from a grocery store, but from a farm and a cow and lots of hard work.

    We don’t get the butter here in NL, but we do get the Spreadables. I used the Cinnamon and Brown Sugar Spreadables to coat my dough when I made Monkey Bread and it tasted great. My hubby said it was the best one I had made yet.
