Brown Sugar Topped Rhubarb Muffins

Rhubarb is one of my favourite things.  I love it in pie, muffins, crisp and as a compote over ice cream.  Every Spring I hoard all of the Rhubarb I can and fill my freezer with it so I can cook with rhubarb well into the Winter.  This week was the perfect week for something with rhubarb. With weeks of never ending snow I wanted to bring some Spring into my home and make a treat my boys would love!

I grabbed a packed of chopped and pre-measured rhubarb and started to work on one of my favourite kid-friendly snacks.  Paired with some sliced cheese they are the perfect afternoon snack.  While these muffins are almost like small coffee cakes with the brown sugar topping, but can be altered to your preference.  If you are looking for a less cake-like batter try adding 1 tbsp of ground flax seed.  If you’d like more fruit add 1/2 cup of chopped strawberries.

A delicious brown sugar topped rhubarb muffin.

Ingredients
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 2 cups chopped fresh or frozen rhubarb
  • Topping:
  • 2/3 cup packed brown sugar
  • 1 tbsp butter melted
  • 1/2 tsp cinnamon

    I’ve never had a rhubarb muffin! We had a patch of rhubarb that grew like a weed (seriously, we tried to get rid of it so many times) in our backyard growing up, so I ate rhubarb sprinkled with sugar ALL the time. Yum!
