While I love a good sandwich I do get tired of sandwiches for lunch so excited to have a change. I’ve made this Ham Tomato and Feta Pasta Salad a few times in the past couple of weeks and love it just as much every time! The dressing is light and adds the perfect flavours to enhance the fresh tomatoes and basil. The saltiness of the feta and ham perfectly contrast the sweetness of the basil and tomatoes. The combination is simple yet perfectly delicious. I also love that it’s a combination of a variety of food groups making it a meal in a bowl. While I love it for my lunch, it also travels well and is fantastic for potlucks and group gatherings.
Ham Tomato and Feta Pasta Salad
Ingredients:
300 g box Catelli Super Greens Pasta
2 cups of cubed cooked ham
1 cup cubed feta
8 basil leaves thinly sliced
2 cups sliced tomato or cherry tomatoes
Dressing:
3 tbsp olive oil
2 tbsp white wine vinegar
1 tbsp lemon juice
1/2 tsp dried parsley
1 tsp minced garlic
1 tsp salt
1/2 tsp ground pepper
Directions:
Cook pasta in salted water, drain and cool completely.
Add ham, feta, basil and tomatoes. Toss. Add dressing and toss until completely mixed.
Cover and refrigerate until ready to serve.
