The last few days have felt like late Spring around here. Temperatures in the double digits, and bright beautiful sunshine. Great weather, and feeling great has allowed me to get outside and take advantage of the fresh air and exercise I need to shake off the winter cobwebs. As my initial video proclaimed, taking theActivia® Challenge was more than just a commitment to eat 200g of Activia yogurt a day, it was also a commitment to myself to make healthy eating and exercise a priority. While I haven’t hit the gym yet, I did sign up for a weekly yoga class, I’m taking my dog for walks at lunch when I can I’m spending time outside with my boys.
This past weekend we got the boys two-wheeled bikes out of the shed and tried to convince them they were ‘too big’ for their tricycles. My boys resist change so they did not want to give up their trikes even though they were absolutely too big for them. But, we got them out there and after some effort and lots of getting started pushes they were riding around like pros. It was amazing to see them try, and even though they were frustrated, they moved forward with encouragement. It was a remarkable reminder that as adults too often we try, get frustrated and move onto something else. The risks and learning that takes place in children is truly phenomenal and a great reminder that hard work does garner results.
After hours outside pushing bikes, running alongside them and soaking up some much needed sun I felt refreshed, exhilarated and proud. Proud of my boys, but also proud of myself and the small change I have made to feel better both inside and out.
It is hard to believe that this is week four of theActivia® Challenge. In just four weeks I have noticed a big difference in my feeling of satisfaction, and my food choices. When I am hungry I reach for Activia® yogurt instead of salty or sugary snacks. I’ve increased not just the yogurt in my daily diet but the fruit and grains too. Both pair perfectly with Activia® yogurt and leave me feeling not only satisfied but filled with energy. No more extreme sugar crashes or headaches from too much salt.
One of my favourite new recipes is for a delicious yogurt and granola parfait. The combination of Activia® Greek Lime yogurt and fresh raspberries is truly heavenly. Here’s how to make your own:
Lime and Raspberry Yogurt Parfait
Makes 2 parfaits
2 small mason jars or parfait glasses
2 x 100g Activia® Greek Lime yogurt
1/2 cup granola
1 cup fresh raspberries
Sprig of mint for garnish (optional)
Directions:
Place 1/2 Activia® Greek Lime yogurt (50g) in the bottom of a mason jar and top with 1/8 cup granola and 1/4 cup raspberries.
Add the remaining half (reserve one spoon of yogurt on the side) and top with 1/8 cup granola and 1/4 cup raspberries.
Top with spoon of yogurt, a sprinkle of granola and a sprig of mint.
Serve immediately.
An easy to make yogurt parfait that is perfectly portable for those busy days.

I would absolutely LOVE a yoghurt parfait!! But it’s the mason jar that makes it even more delectable!! I would love to do the Activia challenge. Would be so easy since we eat it like crazy in our household everyday anyway! Yum!
