Rhubarb Bruschetta with Goat Cheese

A tangy alternative to traditional bruschetta. This Rhubarb Bruschetta with Goat Cheese is a delicious recipe perfect for late Spring and Summer.

Ingredients

  • 1.5 cups sliced or cubed fresh rhubarb cannot be frozen
  • 2 tbsp minced red onion
  • 1/2 tsp Windsor Kosher Salt + more for finishing
  • 1 tbsp White Wine Vinegar
  • Goat Cheese I used honey goat cheese
  • Chopped Basil for garnish
  • Honey for drizzle
  • 1 baguette

Instructions

  1. In a mixing bowl combine rhubarb, red onion and 1/2 tsp Windsor Kosher Salt.
  2. Let stand a few minutes.
  3. Then add white wine vinegar and let stand 5-10 minutes.
  4. Meanwhile slice baguette and broil until lightly toasted.
  5. Spread a layer of goat cheese, top with rhubarb and basil.
  6. Drizzle with honey, sprinkle with kosher salt and serve immediately.
