Rhubarb Bruschetta with Goat Cheese
A tangy alternative to traditional bruschetta. This Rhubarb Bruschetta with Goat Cheese is a delicious recipe perfect for late Spring and Summer.

sliced or cubed fresh rhubarb
cannot be frozen

Windsor Kosher Salt + more for finishing

White Wine Vinegar

Goat Cheese
I used honey goat cheese

Chopped Basil for garnish

Honey for drizzle

In a mixing bowl combine rhubarb, red onion and 1/2 tsp Windsor Kosher Salt.

Let stand a few minutes.

Then add white wine vinegar and let stand 5-10 minutes.

Meanwhile slice baguette and broil until lightly toasted.

Spread a layer of goat cheese, top with rhubarb and basil.

Drizzle with honey, sprinkle with kosher salt and serve immediately.
