Campfire Hungarian Goulash

A delicious Hungarian dish that can be made in a large pot or boiling over a campfire. One of our favourite recipes for a meal at home or for a big crowd over the fire.

Ingredients

  • 2 cups redskin potatoes cubed
  • 3 tbs. olive oil
  • 1 small onion diced
  • 1 tbs. minced garlic
  • 1 large tomato diced (you could easily substitute a 14 oz can of diced tomatoes, if needed)
  • 1 yellow or green pepper cut into chunks
  • 2 tbsp hungarian paprika
  • 1 16 oz package of hot dogs cut into slices
  • salt and pepper to taste
  • 4-5 Cups water

Instructions

  1. #1. Bring campfire to a high enough heat to boil water. Place cast iron pot over fire.
  2. #2. Add the olive oil and minced garlic into the pot, then add in the diced onion and sauté until translucent. (Watch carefully to ensure the ingredients don't burn)
  3. #3. Add in the hot dogs, tomato, pepper, paprika and salt & pepper
  4. #4. Cover the mixture with water (about 4-5 cups) and simmer on medium heat 45 minutes - 1 hour or until the potatoes are cooked through and can be pierced with a fork.
  5. #5. Remove from heat and serve.
