Ingredients
1cupchopped red onion
1/4cuppacked brown sugar
1/3cupketchup
1/4cuporange juice
3tbspcider vinegar
3tbspreduced sodium soya sauce
1tspfresh grated ginger
4chicken breasts cut into 1 inch cubes
1large can of pineapple chunks in juicedrained
3large carrots in thick slices
dash of Tabasco
pinchof salt
pinchof pepper
Instructions
Add onion, chicken cubes, pineapple chunks and carrots to slow cooker.
Then, In a large bowl whisk together brown sugar, orange juice, ketchup, vinegar, soya sauce and ginger.
Pour sauce over the vegetables and chicken and turn slow cooker on.
Cook 6 hours on low or 4 hours on high stirring once during cooking to ensure chicken is coated. 15-30 minutes before serving add dash of Tabasco, pinch of salt and pepper.
