Pumpkin Muffins with Caramel Pecan Topping

Pumpkin Muffins

Moist, delicious and not over spiced these pumpkin muffins topped with Caramel Pecan Topping. It's a match made in heaven!

  • 2.5 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1.5 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger
  • 2 cups canned pure pumpkin not pumpkin pie filling
  • 4 large eggs
  • 2 cups sugar
  • 1/2 cup vegetable oil
  • 1/2 cup butter melted


  1. Preheat oven to 350.
  2. In a large bowl combine all dry ingredients. In a stand mixer beat pumpkin, eggs, sugar, oil and butter together until fully combined.
  3. Add dry ingredients in batches and mix until batter if complete.
  4. Pour batter into muffin liners and bake for 20-25 minutes.
  5. Check to ensure muffins are cooked all the way through by inserting a toothpick.
  6. Once cooled top with Caramel Pecan Topping and serve.
