Mini St Patricks Day Cupcakes

Ingredients

  • Vanilla Cupcakes:
  • 2 cups cake flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ cup butter softened
  • ½ cup milk
  • 2 eggs
  • 1.5 tsp vanilla

Instructions

  1. Preheat oven to 350F
  2. In a large bowl mix together flour, sugar and baking powder. Set aside.
  3. In a stand mixer whip butter until softened.
  4. Add milk, eggs and vanilla and beat until smooth.
  5. Add flour mixture to wet mixture and mix just until fully combined.
  6. Spoon into mini cupcake liners and bake at for 5 mins checking often because they cook quickly.
