Chicken and Egg Breakfast Mug
A delicious and easy breakfast for one packed with healthy foods and lots of excellent protein.

Spray of Cooking Spray or 1/2 tsp olive oil

oz
cooked chicken
diced

4-6
baby spinach leaves

1
medium egg
-
2
tbsp
aged white cheddar
-
1
tbsp
freshly grated parmesan
-

tbsp
salsa
optional
-
dash of hot sauce
-
Salt and pepper to taste

Spray mug with cooking spray.

Place spinach leaves on the bottom and top with chicken.

In a small bowl add egg, chedar and parmesan cheeses, hot sauce, salt and pepper.

Beat together and pour over chicken and spinach.

Place in microwave for 1.5 minutes on HIGH until the egg puffs up and is cooked fully.

Top with Salsa (optional).
