Lemon Cupcakes

Bright lemon cupcakes perfect for topping with Easter Eggs. 

Ingredients

  • 1.5 cups all-purpose flour
  • 1 tsp lemon zest
  • 1.5 tsp baking powder
  • 1/8 tsp salt
  • 1/2 cup butter softened
  • 3/4 cup white sugar
  • 2 eggs
  • 1.5 tsp vanilla
  • 1 tbsp lemon juice from fresh lemon
  • 1/2 cup 2% milk

Instructions

  1. Heat oven to 350F

  2. In a medium bowl whisk together the dry ingredients – flour, lemon zest, baking powder and salt. Set aside.

  3. In a stand mixer beat butter and sugar together until smooth. Then add eggs, vanilla and lemon juice.

  4. Add the dry mixture in batches and mix until combined.

  5. Fill muffin cups until 2/3 full and bake until an inserted toothpick comes out clean approximately 15-20 minutes.

  6. Top with your favourite buttercream frosting.
