Gluten Free Mini Crab Cakes

Mini crab cakes that are the perfect appetizer for any party. Small bites and so fun to serve!

Ingredients

  • 3 tbsp coconut oil
  • 1/2 crab meat 2x120g cans
  • 1/3 cup crushed Breton White Bean with Salt & Pepper
  • 2 green onions white and green finely chopped
  • Half a jalapeƱo seeded and finely diced
  • 3 tbsp Miracle Whip or mayonnaise
  • 1/2 tsp dry mustard
  • 1 egg
  • 1 tbsp lemon juice
  • 1 tsp Old Bay Seasoning
  • Dash of Tabasco
  • Thai Sweet Chili Sauce

Instructions

  1. In a large bowl mix together crab, Miracle Whip, green onion, jalapeƱos, egg, lemon juice and Tabasco.
  2. In a small bowl combine half of the cracker crumbs (set rest aside for coating), dry mustard, Old Bay seasoning.
  3. Add dry ingredients to wet ingredients and mix well.
  4. In a small saucepan add coconut oil and heat on medium-high until melted.
  5. Roll 2 tbsp of crab cracker crumbs and fry for 1-2 mins each side or until brown.
  6. Remove from oil and set on rack to cool. Serve on top of a Breton White Bean with Salt & Pepper cracker with baby kale and top with Old Bay Sauce. (2 tbsp Miracle Whip + 1 tsp Old Bay seasoning + 1 tsp lemon juice) and a dollop of Thai Sweet Chili Sauce.
