Cherry Coke Cupcakes

These Cherry Coke Cupcakes are perfect for any occasion and are made from a simple box mix plus some delicious add ins.

Ingredients

  • Cake:
  • 1 box Devils Food Cake Mix
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 cup Coke
  • 1/3 cup Maraschino Cherry liquid
  • 24 Maraschino Cherries
  • Frosting:
  • 1 1/4 cup softened Butter
  • 5 cup Powdered Sugar/Icing Sugar
  • 2 tbsp Coke
  • 1 tbsp Maraschino Cherry liquid
  • Red Food Colouring optional
  • 24 Maraschino Cherries

Instructions

  1. Preheat oven to 350.
  2. Line muffin pan with paper liners.
  3. Make batter according to mix direction EXCEPT substitute 1 cup Coke and 1/3 cup cherry liquid for water.
  4. Fill liners 2/3 full and add 1 cherry to the middle of each.
  5. Bake according to box directions and allow to cool completely.
  6. Frosting:
  7. Whip butter, coke and cherry liquid and gradually add icing sugar.
  8. You can optionally add red food colouring to get desired colour.

  9. Transfer frosting to piping bag and frost each cupcake. 

  10. Top each with a maraschino cherry.
