Gluten Free Lemon Poppyseed Loaf

Ingredients

  • 1 PC Gluten Free Yellow Loaf Cake Mix
  • Juice of 1 lemon approx. 1/4 cup
  • Zest of 1 lemon
  • 1 tsp lemon extract
  • 2 eggs
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 1 tbsp poppy seeds

Instructions

  1. Preheat oven to 350
  2. In a stand mixer or large bowl add cake mix, lemon juice, lemon zest and lemon extract and mix until combined.
  3. Then add in eggs, water, vegetable oil and poppy seeds and mix on medium speed for 2-3 minutes.
  4. Line a loaf pan with parchment paper and bake for 55 minutes or until it is brown on the edges and an inserted toothpick comes out clean.
  5. Allow loaf to cool.
