Roasted Beet and Goat Cheese Salad

Roasted Beets

A delicious side dish that can be added to salad or served on it's own.

Ingredients

  • 7 large fresh beets washed and leaves trimmed.
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 425C
  2. Wrap beets in foil, drizzle with oil and place on rack in oven.
  3. Bake for 1 hour.
  4. Unwrap partially and allow to cool.
  5. Once cooled peel beets and cut into 1 inch cubes.
  6. Place in the fridge until ready to serve.
